Manual harvest in 400kg bins, second half of March.
Winemaking
Traditional in stainless steel tanks, pre-fermentative maceration for 24 hours to extract aromas. Alcoholic fermentation for 8 to 10 days at 24/28 ºC. Pneumatic pressing and natural malolactic fermentation, followed by clarification and filtration.
