Winemaking

Traditionally fermented in stainless steel tanks, with pH correction using tartaric acid and subsequent inoculation with selected yeasts to begin the co-fermentation of both varietals at a controlled temperature of 24-27°C, for a period of 8 to 10 days. The pressing method is pneumatic, followed by natural malolactic fermentation. After this process, the wine undergoes clarification and subsequent filtration.
