Harvest
Careful manual harvest in 400kg bins during the first and second half of February.
Winemaking
Manual harvesting in 400 kg bins during the early morning hours to preserve the grapes’ cool temperature and fruit integrity. Upon arrival at the winery, the grapes undergo a careful cluster selection before destemming, followed by gentle pneumatic pressing at low pressure to obtain the highest-quality free-run juice. The must is then cold-settled through static clarification.
Alcoholic fermentation takes place in stainless steel tanks using selected yeasts at a controlled temperature between 14°C and 16°C, maximizing the expression of its characteristic pineapple, pear, and apple aromas. Once fermentation is complete, the wine is aged on its fine lees, contributing richness and volume on the palate.
Finally, the wine is stabilized and clarified using bentonite, followed by a final filtration to ensure perfect clarity and brilliance before bottling.
